Triple Citrus Glazed Salmon

I was watching Food Network and saw this recipe on "Down Home With the Neely's" and thought it would be so yummy! We fixed it for John's parents for their birthday dinner! You could taste all the citrus flavors...and it was yummy and it's my new favorite way to prepare salmon! I didn't get a picture because even the kids liked it and everyone gobbled it up!!

Triple Citrus Glaze ~
3/4 c. fresh orange juice
1/4 c. lemon juice
1/4 c. lime juice
1/4 c. chicken stock
1 garlic clove, minced ~ I just used a 1 t. prepared minced garlic
2 T. orange marmalade
2 T. soy sauce
1 T. rice wine vinegar
1 T. brown sugar
1 T. butter
pinch kosher salt and fresh ground pepper to taste
{I added 1 t. of cornstarch to thicken it a little more}

Bring all of the ingredients to a boil in a medium sized sauce pan over medium heat, stirring to melt the preserves and keep the mixture from burning. Reduce heat to simmer and let sauce reduce to a syrupy consistency. About 15-20 minutes. Add salt and pepper to taste.

Salmon ~
extra virgin olive oil
4 {6 0ounce 1 in. thick} salmon fillets ~ {I had 10 salmon fillets and had plenty of glaze}
kosher salt and fresh ground pepper

You can go to the link to see how they grilled the salmon but we just baked it in the oven. Line a cookie sheet with tinfoil and drizzle with olive oil to prevent salmon from sticking. Sprinkle with salt and pepper, turn salmon over and coat salmon with olive oil and salt and pepper. Brush salmon with glaze. Bake at 450 for 20 minutes, basting with glaze every 5 minutes or so. After about 20 minutes, move cookie sheet closer to broiler , brush with more glaze and broil for about 5 minutes, watching carefully. We had green salad, The Pioneers Woman's Crash Potatoes {these were soooo good}, rolls, Banana Cream Pie, and Frozen Pie for dessert! It was so good! I hid a piece of the salmon and am going to go have it now!!
