Mini Ham and Cheese Rolls

These were so yummy and fast to fix! Almost as good as the Mini White Castle-like Sliders she makes. They come from the Big Red Kitchen: Mini Ham and Cheese Rolls as does the picture.

2 T. dried minced onions
1 T. prepared mustard (I used Dijon)
1 T. poppy seeds
1 stick melted butter
1 dozen dinner rolls or 2 dozen party rolls- {I used the King's Hawaiian rolls found by the deli meat and cheese}
1/2 pound ham
1/2 pound thinly sliced Swiss cheese
Preheat oven to 325°. In a small mixing bowl mix onion, mustard, poppy seeds, and melted butter. Leaving the dinner rolls intact, slice them open so that you have one solid top and bottom. Place the bottom half on a baking sheet or in a 9x13 inch baking pan, the pan size will depend on choice of rolls. Line the bottom half of the rolls with cheese slices and ham. Return the top part of the rolls and drizzle the butter mixture evenly over top. Cover with foil and bake for 20 minutes. Now use a sharp knife and separate the little sandwiches. Place on a pretty platter and serve immediately.

Note- These can be made ahead of time and refrigerated, may require 5 more minutes of baking. Also can be prepared ahead and frozen. Defrost in refrigerator overnight and bake as directed. I love keeping a pan of these in the freezer for emergencies. Leftovers can be reheated in the microwave for about 15-20 seconds.
I served these with green salad, chips, and grapes! A great summer meal!

Ham and Swiss Rolls

This recipe come from "Becky Higgins...Recipes To Share" {picture from Becky Higgins}. It looked really good and I thought it would make a great meal along with some chips, and the Snicker salad.

24 rolls
mayonnaise
12 thick slices deli ham (black forest)
12 slices Swiss cheese
1/2 c. melted butter
1 1/2 Tbsp. mustard
1/2 tsp. Worcestershire sauce
1 1/2 Tbsp. poppy seeds
Slice rolls in half so they open. Spread mayo on top and bottom of the inside of each roll. Assemble rolls with ½ slice of cheese and ½ slice of ham.
Place all of these in a baking pan or stone. Mix together the melted butter, mustard, Worcestershire sauce and poppy seeds with a whisk. Brush this mixture all over the tops of the rolls and cover with tin foil. Bake at 350 for 15-20 minutes until heated through.

Ham and Cheese Crepes

This recipe I got from Adreinne at "Taste The Joy". She has so many great recipes!
12 crepes ~ {see recipe below}
12 slices thin cooked ham
1½ c. cheese ~ American, Swiss, whatever you like
Sprinkle crepe with cheese and top with ham.
Mix together:
1 T. chopped green onion
½ c. sour cream
½ t. salt and pepper
½ t. prepared mustard
Spread over ham.
Roll up and place in a 9x19 foil lined plan.
Mix together: 1/3 c. bread crumbs
3 T. melted butter
Combine and sprinkle over crepes. Cover loosely with foil and bake @ 350ยบ for 15-20 minutes.
You can also make use cheese or cream soup to make a sauce.
