Moca Cakes

I remember making these with my mom and Kaye Carlson for some big occasion and I fell in love with them!!! Cute little square bite size cakes!!! The recipe makes quite a few but they freeze great!!! Kaye got the recipe from Helen Dean Huntsman! I have had it on a piece of paper for about 5 years and I need to get it on here so I don't lose it!!! And I'm typing it as is from the paper. If you don't have the same size cookie sheet, some adjustments may be needed.

Cream together: 
1 c. butter
2 c. sugar
Add:
6 beaten egg
1 c. milk
2 t. vanilla
4 c. flour
4 t. baking soda
Mix together until all ingredients and incorporated.

Place in a school size cookie sheet {12x17} 
Bake @ 350° fro 25 minutes until lightly browned
Cool completely
Cut into 1½ x 1½ pieces ~ makes about 80-100 pieces
Separate and out into freezer to freeze.

Frosting:
1 c. butter, softened
4 c. powdered sugar
2 T. milk
Dash of vanilla
{1 batch of frosting frosts about 41 little cakes}
Nuts: 
3 c. finely crushed walnuts
3 c. finely crushed unsalted peanuts ! these can be out in a blender to chop them up
{! batch of nuts does about 71 little cakes}

Frost each frozen cake, roll in nuts, square up with your hands and out back into freezer. 
These are easiest to frost and roll in nuts cake is frozen
After frosting, let freeze again until firm. Place in large baggies and keep frozen until needed. 
Take out of freezer about a half hour before needed to thaw!!!

Banana Cake

I don't have a picture to go with this but please go make it today!!! I've decided I can't make it or I eat the whole pan!!! It's moinst like banana bread, has a yummy little crust of goodness on top, sweet, and just good! It's not like your traditional "banan cake" with cream cheese frosting, it's really quite different that any banana cake I've had! There's no frosting but you won't miss it!! This recipe come from my sister-in-law Shannon!! I'll post a picture next time I make it, or next time she does ;)...

1 1/2 c. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
4 banana's ~ smashed
3/4 c. sugar
1 egg
1/3 c. melted butter
1 c. butterscotch chips ~ {yum}
Beat well and place in greased 9x13 pan.

Topping:
1/3 c. brown sugar
1/8 c. flour
1 T . butter

Blend together well with a fork and sprinkle over cake. Bake at 350 for 25 minutes.
Let cool then cut you a nice little piece ~ or a huge piece like I do ~ and enjoy it in all it's deliciousness!!!

Mountain Dew Cake

This recipe comes from "Real Mom Kitchen" as does the picture. She has lots of great recipes. Thought I could get my boys to eat a "bundt cake" if they knew it had Mountain Dew in it ~ well they had a bite and said..."it doesn't taste like mountain dew"! But I loved it!! It had such a great lemony-citrus flavor and it was so moist! I think the Mountain Dew added great flavor! I also made a quick powdered sugar glaze and drizzled it over the top! Definitely be making this again...who cares if the boys didn't like it...they're spoiled anyway!! Try it...

1 box lemon cake mix
1 box {3.4 oz.} lemon pudding mix
1 can {12 oz.} mountain dew
½ c. vegetable oil
4 large eggs
Preheat to 325º degrees. Lightly grease and flour the bundt pan. In a large bowl combine cake mix and pudding mix. Add oil, eggs, and mountain dew. Beat at medium speed with hand mixer till the batter is smooth. Pour into prepared pan and bake for 45-50 minutes until toothpick inserted into middle comes out clean. Let cool in pan for 10 minutes, then remove from pan and let cool completely. Can drizzle with powdered sugar glaze if want to.

NJ Coffee Cake

This recipe and all the pictures come from the "Big Red Kitchen" ~ go see what she posted today...Fried Squeaky Cheese!

One Box Yellow- I like Duncan Hines ~ Prepare cake mix as directed; pour into 3 eight inch round cake pans.
Bake for 15 minutes (cake will look wet).
While cakes are baking-prepare the following crumb mix by mixing the following ingredients until crumbly.
4 cups flour4 sticks of butter or margarine, softened
1 1/3 cup sugar
2 T. Cinnamon
1 T. Vanilla


Sprinkle the crumb mixture over the cakes once they are done the first 15 minutes and bake them another 17-20 minutes or until toothpick comes out clean.
Let cool completely and sprinkle with powdered sugar.



Note- You may want to make these in disposable pans as it is easier to give away and not have to ask for your good cake pans back.

Angel Lush with Pineapple

This cake is so light and refreshing AND easy to whip up!!

1 pkg. (4 serving size) JELL-O instant Vanilla pudding
1 can- 20 oz.- Dole crushed pineapple w/ juice (don't drain)
1 cup Cool Whip
1 prepared round angel food cake
Fresh strawberries

Mix dry pudding mix and pineapple together until mixed.
Gently stir in cool whip.
Cut cake horizontally in three layers.
Top each layer with pudding mixture (see picture)
Refrigerate at least 1 hour.
Just before serving top with fresh strawberries.
Store left overs in refrigerator.

Coconut Poke Cake

This cake is really good...not too "coco-nutty"!!

1 white cake mix
½ can of coconut milk - try it, it turns out really, really good!!
1 can of sweetened condensed milk
1 carton whipped topping
1 8 oz. pkg. flakes coconut

Prepare and bake cake according to directions on box. Remove cake from oven. While hot poke holes in cake with a fork.
Mix together ½ can of coconut milk and sweetened condensed milk. Pour over hot cake.
Let cake cool COMPLETELY then frost with whipped topping and top with flaked coconut.
Keep refrigerated and enjoy.

Watergate Cake

No idea why this cake is named this....but it is delicious !!!!!!!!!!
1 yellow cake mix
3 eggs
¾ c. oil
1 small can mandarin oranges w/ juice

Mix all together - Bake @ 350º for 25 - 30 minutes.
Let cool.
Mix together and frost with:
1 can crushed pineapple - drained
1 lg. cool whip
1 lg. instant vanilla pudding
Mix together and spread over cake.
