Chocolate Choodle Cookies

BEST COOKIES EVER!! That's why I typing it in all caps!! These are the cookies the school makes and our family just loves them!!! This makes about 4 dozen cookies, or more depending on your scoop size!

1 lb. + 1 1/4 oz. butter ~ softened
3 1/2 c. sugar
3 eggs
1 qt. + 1 c. flour
1 5/8 t. cream of tartar
1 5/8 t. baking soda
2/3 c. + 2 t. unsweetened cocoa powder
To roll cookies in...
3 2/3 oz. powdered sugar

Cream butter and sugar together, add eggs. Combine all the dry ingredients and add to the creamed mixture. Scoop {we used a #30 scoop, it's about 1 3/4 t.} and roll the dough in powdered sugar. Place on cookie sheet 4x5 and slightly flatten. Bake @ 325°  for 4 minutes, turn, turn then bake another 4 minutes!!

Cornflake Cookies

1 c. sugar
1 c. corn syrup
1 1/2 c. peanut butter
1 tsp. vanilla
6 1/2 c. corn flakes
In large pan mix together sugar and corn syrup. Cook ans stir until mixture boils. Remove from heat and add peanut butter and vanilla. Stir until peanut butter is melted. Pour mixture over cornflakes and drop onto parchment or wax paper. Let cool for a bit and enjoy!

Snickerdoodles

½ c. butter ~ softened
½c. shortening
1½ c. sugar
2 eggs
2¾ c. flour
2 t. cream of tartar
1 t. baking soda
¼ t. salt
2 T. sugar
2 T. cinnamon
Heat oven to 400º.
Mix butter, shortening, sugar, and eggs. Mix in flour, cream of tartar, soda, and salt.
Shape in to round teaspoon size balls.
Mix cinnamon and sugar ~ roll balls in mixture and place on cookie sheet.
Bake 8-10 minutes. Remove from cookie sheet to cool.
Makes 6 dozen.

Chocolate Snow Flurries


2 c. flour
1 t. baking soda
2/3 c. baking cocoa
¼ t. salt
¾ c. sugar
2/3 c. brown sugar
½ c. butter or margarine
2 eggs
1 t. vanilla
½ c. chocolate chips

Preheat oven to 375º. Combine flour, cocoa, baking soda & set aside. Beat sugar, brown sugar butter or margarine, & vanilla till combined, beat in eggs & gradually add flour mixture. Add chocolate chips. Refrigerate 10-15 minutes for easier handling. Roll into 1 in. balls and roll in powdered sugar. Bake @ 375º for 8-10 minutes.

I doubled this recipe and every one gobbled them up!! You need a big glass of milk to go along with these!!

Peanut Butter Blossoms

Try using minature Reese's Peanut Butter Cups in place of the Hershey Kisses - SO GOOD!!!!

1/2 c. butter - softened
2/3 c. peanut butter
1/3 c. sugar
1/3 c. brown sugar
1 egg
2 T. milk
1 t. vanilla
1 ½ c. flour
1 t. baking soda
½ t. salt
Hershey Kisses or Reese's Peanut Butter Cups

Beat butter, peanut butter, sugar, and brown sugar till creamy. Beat in egg, milk, and vanilla. Add flour, baking soda, and salt. Mix together.
Shape into 1" balls and roll in granulated sugar.
Bake @ 375º for 9-10 minutes.
Immediately press Hershey Kiss or Peanut Butter Cup into center of each cookie.

Sugar Cookies

2 c. sugar
2 c. shortening
4 eggs
1 c. milk
2 t. vanilla
1 t. salt
2 t. soda
6 t. baking powder
9 c. flour

Mix everything together but milk and flour. Add milk and flour last, alternately.
Chill at least 45 minutes.
Roll out and cut thick.
Bake @ 350º for 8-10 minutes.
Frost and enjoy !!!
Makes about 6 dozen.

No-Bake Cookies or Rolled Oat Custers

I got this recipe from my sis-in-law...thanks Shannon.

2 c. sugar
1/2 c. margarine
1/2 c. milk
3 T. cocoa
1 t. vanilla
1½ c. peanut butter

Bring to boil. Boil 1 minute.
Remove from heat.

Add:
3 c. oats
1 c. coconut
½ t. salt

Mix together and drop by spoonfuls onto waxed paper to cool. Let cool!!
They don't last long....you might want to make two batches....one for everyone to eat right off the waxed paper (or out of the pan) and some for later in the week :0)
