Buckeyes


1 c. creamy peanut butter
½ c unsalted butter, softened
2 c. powdered sugar
2 c. chocolate chips


Line 2 baking sheets with waxed paper.
In a large mixing bowl, beat peanut butter, butter, and pondered sugar together.
Roll into 1 in. balls and place on baking sheet (If mixture is sticky, wet hands with cold water and continue rolling)
Freeze for about 30 minutes.
Microwave chips in glass bowl for 2 minutes, stirring a couple times, until melted/
Pierce each ball with a toothpick and dip ¾ of the way into the chocolate, wiping excess chocolate off on the rim of the bowl. Place back on waxed paper.
Chill in fridge for 45 minutes until set.

Tomatoes & Macaroni

Very easy, very fast!!!

1 pkg. elbow macaroni
Boil in salted water until done.
Drain leaving about inch of water in pan.
Add:
1 lg. can of tomato sauce
1 small can of petite diced tomatoes
salt - to taste
pepper - taste
You may want to add a little more water to make it like soup consistency.

Bring to simmer and warm through.
Make some grilled cheese sandwiches and you have a feel good, comfort food.

Chicken Bruschetta Bake


1 can (14½ oz.) diced tomatoes - undrained
1 pkg. (6oz.) Stove Top stuffing mix for chicken
½ c. water
2 gloves of garlic minced
1 - 1½ lbs. chicken tenders
1 t. dried basil
1 c. mozzarella cheese

Heat oven to 400º. Stir tomatoes, stuffing mix, water, and garlic just until moistened.
Place chicken in a 9x13 glass dish. Sprinkle with dried basil. Top with cheese and stuffing mixture.
Bake 30 minutes or until chicken is cooked through.

Tips: I salt and peppered the chicken and used Italian Diced tomatoes just to kick it up a little. Served with corn, jello, and rolls. It was yummy!! Enjoy.
