Apricot Chicken

This is a yummy, fast, dinner!! Kinda like sweet and sour chicken! The boys weren't real fans because of the onions from the Lipton Onion Soup mix but hey, every once in a while I like to cook something I like!! This recipe comes from a blog called "Blogging...It's whats for dinner!" The picture is her too!!

1 package Lipton Onion Soup Mix
1 8 oz. bottle Russian dressing
10 oz. apricot preserves
2.5 pounds boneless chicken of your choice ~ I used tenders
sticky rice ~ I just used regular rice and it was fine, prepared as directed.

Preheat oven to 350 Dump onion soup mix, dressing, and apricot preserves in dish and mix together well. Add chicken and stir to coat. cover with foil and bake 25-30 minutes or until chicken is baked all the way through depending on the size of your chicken. Serve over rice.
